Ramen Classes

You want to make professional ramen from scratch at home? Then this class is just right for you!  

 

In this a 3-hour hands on class you will learn how to...

        make stock (Pork & Chicken)

  • make Kaeshi (soup base)

  • make chashu (Pork Belly)

  • make noodles

  • make Spicy Pork (tantan men meat)

  • cook Ramen properly

 

- First, you will knead the dough to make your own ramen noodles in the professional kitchen.

- While it rests, we will serve you samples of 4 differnt types of ramen: Tonkotsu Ramen (Kyushu, Nagahama), Miso Ramen (Sapporo), Shoyu Ramen (Tokyo), and Tantan-men (Chinese)

- While  you enjoy the samples, I will talk about history, regional differences, trend in Japan etc.​

- Next, you will learn how to make pork & chicken stocks and chashu

- Now you will roll out and cut your own noodles

- Next you will make your own Kaeshi

- Finally, you will be cooking your own Ramen with the noodles and soup you just made

- Your own Ramen will taste great after the hard work you put in. Enjoy them with your class mates!

 

 

 

 

 

 

 

Sushi Classes

If you love sushi and eat it at least once a week, it's about time for you to make your own!  

100% Hands On!!

 

In this a 3-hour hands on class you will learn how to...

  • make perfect sushi rice

  • use the tools right

  • cut veggies and fish for rolls

  • make 4 different types of rolls

  • slice the rolls nicely

  • plate sushi

        mix rice with Sushi vinegar

  • wash and cook rice

  • cut the veggies and prepare to roll the sushi

  • how to slice and plate what you create

  • You will make:

  • 2 types of Hosomaki                                                      

  • 2 types of Uramaki                                                         

  • 2 types of Futomaki                                                      

  • 2 types of Temaki

Crafting Izakaya Bites

Japanese Street Food

Learn how to make popular Izakaya items from the chef of Nombe, first Izakaya in SF!  

You can make mouth watering staples of Izakaya easily at home.

 

In this class, you will learn how to make delicious and super popular Izakaya bites.  Learn the technique to create delicious items from the pro!  We will use a secret recipe for marinade and sauces.

 

1. Yakitori 
2. Karaage (Japanese fried chicken)
3. Bacon wrapped Mochi
4. Grilled Eggplants with Miso sauce (Nasu Dengaku)
5. Yaki Onigiri

Learn how to make Takoyaki from the master who created a 1 hour line at SF Street Food Festival.  Forget about the thin dry Okonomiyaki you can get at most restaurants here and make REAL Japanese Okonomiyaki at home!

 

In this 3 hour class, you will learn the technique to make successful "round" Takoyaki  (grilled octopus balls) and fluffy Okonomiyaki (the Japanese savory pancake).  At the end of the class, you will enjoy your own Okonomiyaki and Takoyaki!

1. I will give you the recipe for successful batter for both Okonomiyaki & Takoyaki

2. I will show you what you need to put into each dish

3. I will give you the tips for round Takoyaki and fluffy Okonomiyaki

THANK GOD 2020 IS DONE!!!

We survived by working with Off The Grid and the City of

San Francisco, producing meals for food insecure elderly and homeless citizens.

 

Now, we want to kick off 2021 by doing something we do best:  making delicious ramen bento kits!  We took time off to focus on our work for these COVID19 relief programs, but will be offering ramen kits for sale on  February 5th & 6th.

LOBSTER RAMEN:  Continuing a tradition started at Nombe back in 2015, we are offering our scrumptious Lobster Ramen for Valentine's Day.  We will require orders to be placed by February 10th, and will offer pickup times on February 12th, 13th and 14th.  Check here for more details as the date approaches.  We will make a formal announcement with all the details on January 31st.
